PRODUCTION AND HARVEST
Varieties: Tempranillo, Graciano, and Syrah. Wine from the Land of Extremadura.
Harvest: 2023. Aging: 3 months in French oak barrels from Allier.
Production: Harvest is carried out at night in 15-kilo boxes. In the winery, a second manual selection of bunches is made, followed by destemming and pre-fermentation maceration at low temperature (5ºC for 3 to 4 days). Alcoholic fermentation takes place between 14–16ºC with 3–4 pump-overs and daily “délestages” throughout fermentation to extract color. The wine is then racked into 500-liter French Allier oak barrels for 3 months, kept in constant movement using rotating supports.
PAIRING
Ideal with creamy cheeses, Iberian ham, Iberian pork dishes, and hearty spoon dishes (all kinds of legumes)… Serving temperature: 15 – 18ºC.
SENSORY DESCRIPTION
Very bright tones with violet and mauve highlights that reflect its youth. Great aromatic intensity, dominated mainly by fruits such as plum, blackberry, and raspberry. These aromas come from the optimal ripeness at which the grapes were harvested.
